Ilaria Salvetti

Nestled in the picturesque foothills north of Torino, Ilaria Salvetti crafts exquisite wines in the heart of the historic Erbaluce territory. In 2006, inspired by her grandfather, Talin, and helped by her father, Carlo, and husband, Daniele, Ilaria began her winemaking journey by renovating old family vineyards and acquiring a few other select parcels. Today, Ilaria farms 4ha divided into 12 parcels, mostly of Erbaluce, with a small amount of Riesling Renano, all connected by paths in the woods on her hill. The vineyards are located in Caluso, on the south slope of the Ivrea Morainic Amphitheatre, at an elevation of 320-350m. The diverse soil here results from an ancient glacial lake that receded and left a basin-like depression with a foundation of quartz, granite, sand, silt, and clay, providing the ideal environment for cultivating her prized Erbaluce. From the outset, they have worked in the vineyard respectfully and naturally for the health of the soil, plants, and animals and received organic certification in 2016. From pruning to harvesting, the family carries out all operations meticulously by hand, ensuring attention to detail and quality. Ilaria uses a natural approach in the cellar, allowing indigenous yeasts to guide the fermentation and aging the wines in a combination of stainless steel tanks and small used oak barrels. Ilaria honors her family tradition by crafting wines that are expressive of their terroir and reflect her commitment to exceptional quality.
